Ramen Champion 2013 – Launches 2 New Tonkotsu Names.

If you’re, for a reason or another, new to Ramen Champion, read about it in general here, together with my favorite rendition of ramen at the said establishment. This year, two new popular Tonkotsu brands, namely Tonkotsu Itto and Mendokoro Aoi, have been brought in from Tokyo and Gunma respectively, handpicked no less, by the kind people behind Ramen Champion.

Tonkotsu Itto’s Special Tonkotsu Ramen ($16.50+) ::
Broth:
Tonkotsu Itto chooses to remain on the traditional, classic track of Tonkotsu. Consequently, the broth comes out rich, thick, milky and obviously pork-bone brewed from the long hours of slow-boiling of the pork bone in the base.
Ramen: Thin, straight and of medium hardness.
Chashu: Circular, and relatively less fat when compared to its rival. But also less thin.
Ajitsuke Tamago: The one the majority loves – flowy and liquid.

Mendokoro Aoi’s Tonkotsu-Ramen Champion ($16.50+) ::
Broth:
Conversely, Mendokoro Aoi adopts the daring and non-traditional way of preparing its broth – big flame for a short period of time, resulting in a smoother broth and less flavors of the pork bone. The added pork and chicken feet gives more collagen (girls, alert!) and the spices, including chili, garlic and ginger adds a mild spicy taste to the broth, while also acting as a masking agent for the smell of the pork bone.
Ramen: Thin, straight and of medium hardness.
Chashu: Rectangular, a much bigger piece of meat that also comes with a bigger portion of fats. But as a glutton, and an unhealthy one, I wasn’t bothered by it. In fact, I prefer this version because it’s thicker and has more bite to it.
Ajitsuke Tamago: The one the majority loves – flowy and liquid.

Verdict of Tonkotsu Itto v Mendokoro Aoi :: By (the dining table’s) consent, Mendokoro Aoi and (my previous and still standing love,) Ikkousha shall be granted joint custody of Ramen Champion, Bugis+, Singapore, with reasonable love to Tonkotsu Itto, and any other participating outlets. No leave shall be granted, and no appeal shall be awarded from the date of this verdict.
